Super-spongy cookies suitable for coeliacs!

Celiac disease is a condition that can be very cumbersome for those living with it. In some cases, the problem is that people may have celiac disease without knowing it, and in this way they consume foods that they do not tolerate and constantly feel bad. Celiacs cannot eat wheat, oats, barley or rye (TACC).

However, for those who are diagnosed, it is not easy either: although it can be controlled with proper nutrition, it is sometimes very difficult for them to find suitable products, since the food market does not care enough to manufacture them at an affordable price and distribute them.

The same happens with recipes: many could be adapted to people with celiac disease, but due to carelessness they continue to contain flour.

This is a cookie recipe suitable for everyone. It is very useful, especially in the case of children with celiac disease, for whom it can be very distressing not being able to eat the same sweet cookies as their friends.

They are easy to make and delicious!

Ingredients

  • 1 egg
  • 125 grams of butter
  • 200 gr of condensed milk
  • 175 g cornstarch
  • 175 g of rice flour

Preparation

1. Mix all the ingredients until there is a homogeneous paste that is easy to knead.

2. Make balls the size of a walnut and put them on the baking tray covered with parchment paper.

3. Slightly flatten the balls with a fork.

4. Bake at 160ยบ for 12-15 minutes until lightly browned.
