Rejuvelac, also called “enzyme water”, is a fermented water drink with sprouts. Its creation is credited to Ann Wigmore, who actively promoted its use during her lifetime. It is extremely easy to make at home, good for our intestinal health, like all fermented foods, and provides vitamin nutrients.
Prescription
For two cups of Rejuvelac:
– A cup of wheat grains (or another grain)
– Filtered water
– A glass jar
– A cotton or mesh fabric
– A large pitcher with a lid that allows air circulation (5 cups or more in volume)
– A jar with a lid (to store the rejuvelac in the fridge)
Process
1. Start with a cup of wheat grains. You can also use rye, quinoa, buckwheat, or other grains. Wheat, rye, and quinoa make the best Rejuvelac. Put the wheat in a glass jar, fill it with filtered water and add a cloth or mesh to the opening so that things don’t fall inside.
2. Soak the grain for 24 hours. Strain the water, leave the wheat grains in the jar and soak them in water two or three times a day until you start to see the little sprouts (they look like little white tails).
3. Place the sprouted beans in a large jar with a lid that allows air circulation, such as mesh or cotton cloth. Add four cups of filtered water and put it on the kitchen counter for two or three days. You will notice that the water becomes cloudy and small bubbles appear inside the bottle.
4. Try it. It should have a fresh and clean taste, with an acid lemony touch. Strain the rejuvelac. Separate the sprouted wheat grains and store the liquid in a jar with a lid in the fridge. It keeps for a week, just keep in mind that it always has to smell and taste fresh.
You can reuse the wheat to make a second batch, this time it will only take a day.
precautions
The main danger of rejuvelac is that the grains are contaminated by Escherichia Coli and Salmonella. When consumed raw, it is not recommended for pregnant women, children under 6 years of age and people with reduced immunity due to this risk of contamination. You can take precautions so that this contamination does not happen.
how to take it?
Rejuvelac can be taken as is, as if it were water. It can be sweetened or flavored with fruit, in a smoothie. To take advantage of all its properties, it is preferable to consume it raw and within seven days of preparation. It can be taken on a full or empty stomach, at any time of the day.
