There are many people who avoid dairy in their diet, either because they are lactose intolerant, cause intestinal inflammation, have chosen a vegan lifestyle, or simply do not like it.
For any of these reasons, or simply as a matter of taste, plant-based milk is an option that more and more people are beginning to include in their daily lives. In addition, they have the advantage that they can be made at home, add different ingredients according to the personal taste of each one, provide a large amount of plant nutrients to the body, and be used for any preparation in which you would normally use animal milk.
Among the available options, almond, coconut and oatmeal are the most popular, since they are very simple to make and their flavor can be very delicious. But once you make them, you can still use the pulp that you have left.
Here we share some ideas for you to take advantage of it and transform it into tasty and natural recipes.
With almond pulp

Ingredients:
- The remains of making an almond milk with 1 cup of them.
- 4 eggs
- 6 tablespoons of bitter cocoa powder
- 1/2 cup of organic panela
- 1/4 teaspoon salt
- 6 tablespoons of coconut oil
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla
- 2 tablespoons of chopped almonds
Preparation:
- Preheat the oven and place baking paper on a tray.
- In a bowl, mix the cocoa, salt and baking powder. In another container, integrate the panela and the melted coconut oil. Add the eggs one by one, the vanilla, and the pulp of the almonds that you have left from the milk. Integrate the contents of both containers and process.
- Pour the processed mixture into the pan. Put the chopped almonds on top and cook for approximately 15 minutes, until when inserting a toothpick, it comes out dry.
- Let cool and cut into small squares.

Ingredients:
- 1 cup of almond milk pulp
- 1 teaspoon dried basil
- 1/2 teaspoon oregano
- 3 tablespoons olive oil
- 1 tablespoon of flax
- 2 tablespoons and a half of water
- Salt, garlic and pepper, to taste
Preparation:
- Grind the flax seeds, previously soaked in water. Strain, add the tablespoons of water and beat. Let stand for 5 minutes. Meanwhile, preheat the oven.
- In a separate bowl, mix the almond pulp, basil, oregano, salt, pepper, garlic, and oil. Wait 5 minutes and then add the flax.
- Knead with your clean hands, form a ball and place it on a tray with baking paper (one above and one below so it doesn’t stick). Stretch it with a stick.
- Remove the top paper and cut with a knife forming the crackers.
- Bake 20 minutes on each side.

Also, if you want to quickly figure out what to do with the almond pulp, you can dehydrate it or bake it until dry, transforming it into flour to use in any recipe or to keep in your pantry.

Coconut and cocoa bites
Ingredients:
- What is left over from making 1 liter of coconut milk
- 5 tablespoons of peanut butter
- 3 tablespoons coconut oil
- 3 tablespoons chia seeds
- 3 tablespoons of bitter cocoa
- Panela to taste
Preparation:
- In a bowl, mix the coconut with the panela, the chia, the oil and the butter.
- Use your hands to make little balls, like truffles.
- In a small plate, mix the cocoa with a little more panela. Pass your balls through these ingredients, rolling them with the palms of your hands. And ready! You don’t even need to cook them.
Cookies
Ingredients:
- leftover coconut milk
- 1 tablespoon of oil
- 4 tablespoons of brown sugar
- 100 grams of oatmeal
Preparation:
- In a bowl mix all the ingredients and, if you see it necessary, add a little water.
- Shape the cookies with your hands, place them on a baking sheet lined with parchment paper and cook for 20 minutes.

Ingredients:
- 150 gr of what you have left over from the oat milk
- 150 grams approx. of breadcrumbs
- a little soy sauce
- Curry, pepper and salt, to taste
Preparation:
- Put all the ingredients in a bowl and knead until a uniform dough is formed. Go adding breadcrumbs if you need it to be drier, or a little water, if you need it more moist.
- Prepare the meatballs and cook them in a pan with olive oil or in the oven.
- You can accompany them with a homemade carrot and crushed tomato sauce.

Ingredients:
- Leftover oat milk
- 1 ripe banana
- 1 tablespoon of honey
- Shredded coconut (c/n)
- Granola (c/n)
Preparation:
- Mix all ingredients except granola in a bowl.
- Form the cookies with your hands, pass them through the granola as if you were making a milanesa, and bake them until they are crispy.
