Ingredients
– 2 cups of cooked quinoa
– 2 large eggs
– 1 cup of chopped cherry tomatoes
– 1 cup of chopped onion
– 2 cups of shredded mozzarella
– 1 teaspoon of garlic powder
– 1/2 cup chopped fresh basil
– 1 teaspoon of paprika
– 1 teaspoon of dried and chopped oregano
Preparation
1. Preheat the oven to 180°c.
2. Mix all ingredients in a medium bowl.
3. Grease a muffin tray with a drop of oil, and distribute the mixture in each hole. Press a little to compact.
4. Cook between 15 and 20 minutes.
5. Let the sandwiches cool completely before removing them from the tray. You can serve them alone or accompany them with some sauce, like the one you would normally use to cover a pizza.
