Creamy Vegan Organic Organic Mushroom Stroganoff

Stroganoff is a traditional Russian dish normally prepared with meat and dairies. This vegan version of Stroganoff with Giorgio’s organic mushrooms will make your mouth water! And you won’t believe how tasty and easy to prepare this is. Let’s see…

For the ingredients (5 servings)

  • 4 – 5 tablespoons vegan butter
  • 1 small yellow onion (or large shallot). It should be sliced ​​finely.
  • 3 minced garlic cloves
  • 2 cans of Giorgio’s sliced ​​organic mushrooms
  • 2 tablespoons flour
  • ¾ cup dry white wine
  • 1 ¼ cup low-sodium vegetable broth
  • ½ – ¾ cup vegan sour cream
  • 2 tablespoons chopped parsley, plus more to serve
  • salt + pepper, to taste
  • 12-16 oz. pasta (use your favorite!)

For the preparation:

Step 1

Cook the pasta according to package directions until al dente. Drain and reserve some of the pasta water.

Step 2

Stroganoff: First, heat the butter in a medium pot over medium-high heat, add onion and fry until golden, that will take more or less 5 minutes.   1. Preheat oven to 180C/350F.
  2. Put the organic mushrooms in a large bowl. Pour over the melted butter, add garlic, salt and pepper to taste and toss well.
  3. In a baking pan (not too large) and place all the rice ingredients.
