A healthy and balanced breakfast is a good way to start the day with energy and a good mood. It is recommended to include 60% carbohydrates, 15% protein and 25% healthy fats.
But it can often be difficult to come up with ideas to include it all in a preparation that is also delicious. Ingredients
(For 3 or 4 pancakes, depending on the size you want to give it)
- 1 apple peeled and grated
- 1/3 cup oatmeal (flake)
- 1/3 cup milk (you can make non-dairy milk!)
- Vanilla essence (a few drops)
- 1 teaspoon ground cinnamon
- 1 teaspoon baking powder
- Sweetener to taste (muscovado sugar, honey, stevia)
- A handful of raisins or cranberries (optional)
Preparation
1. Blend all the ingredients together. You can add the raisins later, if you want, or blend them too. If you incorporate blueberries, make them whole.
2. Heat a frying pan lubricated with a few drops of oil.
3. Pour some of the mixture into the pan, move it so that it covers the entire surface (or let it form a small circle if you want smaller pancakes) and cook for a few minutes.
4.Then, carefully peel it off with a spatula so it doesn’t break and turn it over (you can do this by placing a plate on top and using a kitchen towel to invert the pan without burning yourself). Let cook a few more minutes. And ready!
You can accompany your pancakes with pieces of fruit, nuts, cinnamon powder, honey, jam, or whatever you like the most!
