Yogurt is one of the most common probiotic foods in the world and yet few people really know how to make it at home.
The process of preparing yogurt is very simple. You have to spend about 10 minutes on it. The whole process can take almost an hour, and then the yogurt makes itself. We know that in homemade yogurt there are no preservatives or additives, and the nutrients have not been denatured by industrial processes. We can use the same jars all our lives. In addition, for every liter of yogurt that we make, we stop spending 8 plastic containers with their 8 aluminum lids. Ingredients:
- Milk (as much as yogurt we want to make).
- 1 plain yogurt sugarfree.
- Glass bottles that we have at home. They have to be clean and dry.
- 1 spoon clean.
- Some insulating that conserves heat: newspapers, a cork box, a blanket, etc.
- If it is possible to have a thermometer that reaches up to 90ºC. They are sold in laboratory supply stores.
Elaboration:
- Put a tablespoon of yogurt in each jar. For every half liter of milk you need a tablespoon, more or less.
- put the milk to simmer until i get to 85ºC, stirring from time to time with a clean utensil (for example, the thermometer itself) so that it does not stick to the bottom. This takes about 10 minutes, depending on the ambient temperature. If you don’t have a thermometer, turn off the heat when the milk start to smoke and go up slightly.
- Remove milk from time to time until it goes down to 45ºC. It takes half an hour, depending on the season. If it drops below 45ºC, we will light the fire again until it reaches that temperature.
- we pour the milk in the jars, the more we fill them the better (so there will be less air).
- stir vigorously with the spoon so that the yogurt mixes well with the milk.
- Cover the jars and store them so that keep the heat: wrapped with newspaper and put in a box, wrapped with a blanket, etc. (In this case it may be convenient to put them in a bag to prevent the blanket from staining). Let them rest without moving them at all for at least 6 hours (or overnight) in the warmest place in the house.
- we take out the jars in the box, we wait 5 or 10 minutes for lose the warmth and the we put in the fridge. In about 4 hours the yogurt will have thickened and will be ready to eat. It continues to thicken for two days.
How do you preserve homemade yogurt? Without opening the jar, the yogurt can be kept for 8 or 10 days. Note: You can mix it with fruit in pieces, cereals, granola, or whatever you like… you can also use it in other foods.
