How to bottle your own tomatoes

How to bottle your own tomatoes to store and have on hand whenever you need them.

Preparation:

1- Start by boiling a large pot of water. Put the tomatoes in the boiling water for a minute or two. The riper the tomatoes, the less time they need (the goal is not to cook them but to make them easier to peel).

two- After they have been in the boiling water, transfer them to cold water, and if possible, chill it with ice. Cut the core of the tomato and peel it. The skin should just slide off the pulp.

3- Fill the jars with the quartered tomatoes, completing it up to the neck. Wide-mouth jars are ideal, if you have them.

4- Once the tomato jars are full, add water up to the neck of the jar and also add a teaspoon of salt and a teaspoon of sugar. Clean the mouth of the bottle and close it well with the lid and ring.

5- Place the filled and closed jars in a giant pot of boiling water. The water should cover the entire jar, including the lid. Boil for 45 minutes, and allow the jars to sit for 24 hours.

6- Store the jars of tomatoes at room temperature, away from direct light. And enjoy tomatoes all year round!
