The best bananas to use in this recipe are those that are very ripe. The shells should be brown, at least 50%. Inside, the bananas should be soft and brown. To prepare this pudding you will not need a mixer or food processor. You can even make the entire mixture in one bowl and avoid cleaning a lot of utensils! Ingredients – 2 or 3 very ripe bananas, peeled – 1/3 cup melted butter (you can substitute any vegetable oil) – 1 cup sugar (you can use ¾ cup, or up to ½ cup if you want to make it less sweet ) – 1 beaten egg – 1 teaspoon vanilla extract – 1 teaspoon baking soda – 1 pinch of salt – 1 1/2 cups all-purpose flour Steps to follow: 1. Preheat the oven to 175 °C/ 350 °F. 2. Grease a loaf pan of approximately 10 x 20 centimeters with butter. 3. In a bowl, mash the ripe bananas with a fork until smooth. Mix the melted butter (or vegetable oil) together with the mashed bananas. Then add the baking soda and salt to the mix. 4. Add and stir in the sugar, beaten egg, and vanilla extract. Next add the flour. 5. Pour the mixture into the previously buttered loaf pan. Bake for 1 hour and 10 minutes (check at 50 minutes) at 175ºC/350ºF. 6.
