Delicious avocado and lemon cake

This is a very natural pudding that will fill the little ones with energy at breakfast or as a snack, and that even those who do not accept new flavors very well may like it.

Lemon Avocado Cake Recipe

Ingredients

  • 4 eggs
  • 180 gr of organic sugar
  • 2 avocados (paltas)
  • Juice of half a lemon
  • 50 milliliters of extra virgin olive oil
  • 220 grams of flour
  • 16 gr of yeast (1 sachet)
  • icing sugar for dusting

Elaboration

1. Put the eggs and organic sugar in a container. Beat for a few minutes with a hand or electric whisk.

2. Remove the skin and the seed from the avocados (paltas). Then, with a fork, mash them very well, until obtaining like butter, and then add the lemon juice.

3. Add this avocado paste to the mixture along with the oil and mix very well.

4. Add the flour and yeast, mixing with a spatula, and the mixture will be ready.

5. Pour this mixture into a greased mold, and put it in the oven, preheated, for about 40 minutes at 180ยบ C.

6. Check that it is done, when the crust is golden, pricking it with a knife. If it comes out clean, without traces of liquid dough, it’s done.

7. Unmold and let cool. Then sprinkle with icing sugar.
