Chocolate Beet Brownies – No Sugar or Flour!

When you are looking to prepare something delicious but at the same time healthy and nutritious, you have to know a few tricks. For example, replacing ingredients with others that you never thought would give the same result.

Using vegetables in sweet preparations to provide moisture and consistency is an alternative that can give great results. Carrot cake or carrot cake is an example: it is fluffy, soft and moist, without using flour, oil or eggs. The taste of the carrot is quite sweet, so it is perfect in pastries, although it is not used more frequently.

Here we have another most original recipe: chocolate brownies with beets! Those who have tried them assure that they have never tasted such perfect and creamy brownies before.

Ingredients

  • 180g beetroot, roasted and diced (approximately 2 small beets)
  • 3 tablespoons milk or coconut milk
  • 100 gr of melted butter
  • 4 eggs
  • 1 ripe banana
  • 1 teaspoon vanilla extract
  • 4 heaped tablespoons (or ½ cup) cocoa powder
  • 4 heaped tablespoons (or ½ cup) coconut flour
  • ¼ teaspoon baking soda
  • ½ teaspoon of cream of tartar (depending on the quality of the cocoa it may not be necessary)
  • ½ teaspoon ground cinnamon
  • a pinch of salt
  • A handful of walnuts (optional)

Process

1. Preheat the oven to 180 degrees.

2. Place the beets, coconut milk, butter, eggs, banana and vanilla extract in the processor. Blend until you get a smooth and homogeneous mixture. If you don’t have a food processor, you can puree the beets and the banana and mix the entire preparation for several minutes.

3. Combine the rest of the ingredients in a separate bowl, then add to the mixture.

4. Pour the dough into a 23 x 15 cm or similar buttered mold and bake for 50 minutes or so, until it detaches from the edges.

5. Done! You can present it with strawberries, covered in grated coconut, or with a scoop of vanilla ice cream.
