These Oh She Glows bars incorporate three flavors that combine perfectly: almond, coconut and chocolate. They are prepared in layers. A dough of almonds and oats works as a base. On top of it, almond butter is placed with puffed rice to add a crunchy texture. Finally, the sweets are covered with chocolate and grated coconut.
Ingredients (makes 18 bars)
For the base:
– 3/4 whole almonds
– 1/2 cup of oat flour: to obtain this amount, process 1/2 cup of rolled oats at maximum speed until flour is formed.
– 1/4 cup coconut oil
– 3 tablespoons of honey
– 1/4 teaspoon fine salt
– 1 cup rolled oats
For the middle layer:
– 1 cup of almond butter (you can replace it with peanut butter)
– 1/2 cup coconut oil
– 1/4 cup of honey
– 1/2 tablespoon of vanilla extract
– A pinch of fine salt
– 1/2 cup of puffed rice
For the coverage:
– 1/2 cup of chocolate chips (recipe)
– 1/2 tablespoon of coconut oil
– 1/4 cup of grated coconut
Preparation
1. Preheat the oven to 180°C and cover a 20cm square tray with two pieces of parchment paper (parchment paper).
2. To prepare the base, place the almonds in a food processor and process until ground. You should get slightly larger grains than the ones in the sand.
3. Add the oatmeal, oil, honey and salt and process again until all the ingredients are integrated.
4. Add the rolled oats and process until incorporated into the bun. You should not grind it completely. To check that the texture of the dough is correct, take a little bit and press it between your fingers. It should stick.
5. Pour the batter into the pan you made in step 1. Using a spoon or spatula, spread it out to form an even layer. Prick it with a fork to let the air out and take it to the oven for approximately 13 minutes. After this time, remove the tray from the oven and place it on a wire rack for at least 10 minutes.
6. For the middle layer, in a medium saucepan, mix the almond butter, coconut oil, honey, vanilla and salt. Heat all the ingredients over medium heat until the oil has melted and the mixture is smooth in texture. When this happens, put out the fire.
7. When the dough has cooled for about 10 minutes, add the puffed rice to the almond butter mixture and pour the mixture over the base. Distribute it well to form an even layer and take the tray to the freezer for 40 or 45 minutes. This second layer should completely solidify.
8. When the second layer has solidified, unmold the preparation and cut it into six vertical columns and three horizontal rows. Thus, you will obtain 18 bars. Take them to the freezer for a while while you prepare the coverage.
9. In a saucepan, melt the chocolate and coconut oil over medium to low heat. When half of the chips have melted, remove the pot from the heat and add the shredded coconut. Take the bars out of the freezer and place a small amount of chocolate on each of them.
10. Return the bars to the freezer until the chocolate hardens. Take them out when you are going to eat them, as they will melt quickly.
